Abalone feed exclusively in seaweed. They thrive in the cold waters off southern Chile, which are close to the world’s largest kelp forests.

Chinese, have classified abalone with the likes of sharks fin, ginseng and bird’s nest as some of the most desirable, and expensive foods. The high price of these ingredients often makes them status symbols, reserved for celebrations.

Abalone is extremely difficult to prise from the rocks that they cling to, which helps to explain why they are fairly expensive. They are highly prized not only for their flesh, but also for their beautiful shells, which are lined with iridescent mother-of-pearl.
